When you have one, I've found the key is to relax as much as you can while it's happening (freak out and flailing seems to make it worse), massage the knot out if you can reach it, and then put heat on it. Hot baths are pretty wonderful.
I haven't found a way to keep my leg from reminding me that it had things flexing in ways they weren't meant to be flexed for a day or so afterwards, but this makes it better.
Prevention is best, and that can be as simple as eating more potassium, though that's not a sure-fire thing.
