Slightly pretentious quesadillas:

Sun-dried tomato or spinach flavored tortillas, large.
Goat cheese.
Roma tomatoes, diced
Fresh baby spinach.
Olive oil.
Lightly coat pan with olive oil, heat to medium heat. Put tortilla in pan, flip it when it starts to "bubble" and put cheese and other ingredients on it and fold it over. Cook to desired level of crispiness, flipping frequently.
For less crispy quesadillas, skip the oil and lower the heat.
